Homemade AIP Sausage

Due to some health concerns, I've been on an autoimmune protocol known as AIP. I much prefer to consider it a protocol, and not a "diet" because in my mind, this is a process that will lead to better, long term overall health, and not a short term quick-fix fad. 

Without boring you with too much of the why right now, here is the jist of what it is: 

The AIP is an anti-inflammatory, nutrient dense, elimination protocol. It initially eliminates grains, legumes, dairy, nightshades, eggs, alcohol, nuts, seeds (including coffee, cocoa, and seed-based spices), processed vegetable oils (such as canola oil, corn oil, etc.), refined sugar (this list is extensive...pretty much anything that isn't pure maple syrup, pure honey, and coconut sugar), and processed food chemicals and additives (such as soy, added in nitrates and nitrites, food coloring, anything listed as "natural flavoring", etc.).  

These are all potential inflammatory foods (or ones that you simply shouldn't put in your mouth anyway, like the food coloring and whatever "natural flavoring" means....) that can also play a role in damaging your gut microbiome, among other things. 


The list of "no" foods is extensive. But so far, I've done well. 

Elimination of the above foods is not intended to be a long-term thing. After a period of time long enough to see a reduction in whatever issues/symptoms you have going on, anywhere from 30-90 days, gradual reintroduction of the elimination foods is done so you can identifying what foods might be contributing to your particular issue. 

Even if you don't have an actual issue you are trying to address, following the AIP to the best of your ability is a spectacular way to loose a few (to a lot) of pounds, help you kick that sugar and processed food habit you have going on, and learn to eat more veggies and healthier options in new ways. AIP isn't just about telling you the foods to stay off of, but about showing you the foods you should be eating more of.....like healthy fats, fermented foods, and more wild caught fish. 


For all intents and purposes, my goal was to be on AIP for 30 days, then start the reintroduction phase.  I am currently on day 45 and feeling pretty good. So I guess I'll just keep going. 

I'm sure I'll chat more about this all later, when I can really get my act together. 



In the mean time, the reason for the post.....I wanted to share the most delicious homemade sausage recipe! 

Autoimmune Paleo Breakfast Sausage 
Gutsy By Nature (It is considered AIP because it is free of seed spices and nightshades)

Ingredients:

1 lb ground pork
1T maple syrup (optional)
1t dried sage
1t dried rosemary
1/4 t cinnamon
1/4 t ginger
1t salt

Directions:

1) Using your hands, combine all ingredients. 
2) Shape into patties and pan fry over medium heat until cooked through and browned. 

Boom. Done. 



Ok, sooooo we like to do things in bulk when we can to stock the freezer. We bought a 15lb pork shoulder and multiplied the recipe by 15. 



First I cut the 15lb pork shoulder into manageable parts, then cut everything into cubes (Anthony helped!). I dumped on our spices, dumped on our (optional.....but who would leave this part out?) maple syrup, and give it a good mix. 


Next, it all goes into the meat grinder! This is the fun part. Anthony quite enjoyed himself, and we all kept our fingers. 


We got out our sealer, bags, and scale, and portioned the sausage into 1lb portions.


Well there you have it. Delicious AIP sausage for the freezer. Ready to thaw in the fridge and fry up whenever we want. The little crispy bits that are left in the pan are my favorite. Everyone knows to leave those bits for me!

Gorge Community Music Student Showcase

Yesterday evening, Anthony and Molly participated in Gorge Community Music's Annual Student Showcase Concert! This was their second year performing in GCM's concert. 



There were 5 other GCM students from various other instructors who also took the stage that night. There are more students then that at GCM, but not everyone could make it or wanted to participate. It's so fun seeing what other talent is out there and who calls GCM home. 

Molly took the stage with her instructor, James, and sang "On The Road Again" while strumming on her uke. The crowd was just so smitten with her! Haha She's not the only uke and voice student at GCM, there are A LOT of great singers (all of them older than Molly), as well as uke players (of all ages), but Molly has such a fun spirit about her song choice and playing....she was the only uke student of the night who didn't perform a classical piece!

Next, Anthony got up on the stage and starred in "St. Thomas" while Molly and James played back up for him. Anthony totally smashed it out of the park! He even nailed his solo piece....without even taking one glance at his music the whole performance! Cheers all around from the crowd for that one! Anthony is the only sax student at GCM, so he was totally special in that sense!

We are incredibly grateful to not only have an amazing music teacher, James, but an awesome establishment that supports children and their pursuit of music. Molly has been taking lessons for exactly two years now, and Anthony a year and a half. I'm very thankful they have had this opportunity and hope to see them continue to grow in their musical abilities in the years to come! 


We are so proud of those two and all of their hard work! Excited to see what next year's concert brings!

Rockstar Day

On Tuesday, all of 1st grade celebrated "Rocking the 120th day of school." The kiddos were suppose to dress up as rock stars and they would do various fun things during the day to celebrate. 

Well, Timothy isn't the biggest fan of dressing up for things. The most I've ever gotten him to do was wear a pair of pajama pants on pajama day, haha! Also, seeing as we are lacking in any type of rock apparel for him to wear, we were in a bit of a pickle. 

The best I could do? 80's Cool Dude. This look was comprised of aviator sunglasses, head and wrist bands, spiked jelled hair, gray jeans, a sweet "watt up" t-shirt, and a "Yeah.... I know I'm cool" attitude. Not too much, not too little. Just the right amount of dressing up for Tim. 

Boom. Done. 


I don't know about you, but I'd hang with that guy!

Anthony's Gig with James

Last Friday, the kids' music teacher, James Andrews, invited us to check out his latest live gig at The Lyle Hotel in Lyle, WA. Umm, yes! But not only that, he invited Anthony to play his sax in the background of one of his songs! Double yes!! What a special request! 

At first Anthony was excited, but then he quickly grew nervous. Good thing he didn't have much time to be nervous, or he might have changed his mind! He had only one evening to nail down his chorus part. The rest of what he was to play he was suppose to just make up on the spot and play quietly in the background while James sang. I told him to take a deep breath and just do his best. It's all a learning experience. Everyone will just love the fact that he is up there trying. 

While we enjoyed the start of Jame's gig, the kiddos got a treat and Sam and I shared delicious roasted brussel sprouts and balsamic steamed spinach. After a handful of songs, James called Anthony up to the front. Ekkk!!


Anthony did an amazing job! He played a tad too quite throughout the song (it's hard to hear when he is playing during most of it, lol), but he really nailed the chorus notes (you can hear those!) and even had a little solo in there. I think it was a great confidence boost to get up there with James in front of all those people and play. He knows he should have been a bit louder, but again, it's all a learning experience, and we are so proud of him for being so brave! He got so many compliments from the crowd after the fact, and James was proud of him as well. 



We are very thankful for kind people like James who are placed in our lives and for these types of opportunities for the kids to grow in confidence and skill. 

Oh! And VERY soon Anthony and Molly will be performing at the annual Gorge Community Music Student Showcase Concert! Both of them did so well last year, we are really looking forward to this year! Exciting!!
