Homemade Energy Bites

Homemade energy bites are a nutritious and delicious snack in our home. All the kiddos like them, especially Sammy!

I've seen TONS of different energy bite recipes, but so far I've only made this one. It's the basic recipe, but definitely a winner. Maybe I'll branch out and try the different variations soon! 


The Original Energy Bite

Ingredients: 

2 cups oatmeal
1 cup peanut butter (Or other nut butter)
2/3 cup honey
2 cups coconut shreds
1 cup ground flax-seed
1 cup mini chocolate chips, or chopped up chocolate (This is optional)
2 tsp vanilla

Directions:

1. Mix all ingredients together.
2. Roll into balls and place on cookie sheet (Your hands will get gunked up from time to time while forming the balls, making it difficult. When this happens, simply was them off then preceded.)
3. Freeze on cookie sheet for one-two hours, remove from cookie sheet and place in an airtight container or ziplock bag. Store in freezer. 


Into the freezer they go! They are great still cold, thawed on the counter, or popped in the micro for a few seconds. Either way you have them, they are yummy!
