Homemade Chicken Noodle Soup

Back in August, I tried my hand at homemade chicken noodle soup with homemade noodles! This is a recipe Sam knows and makes every year, either for Christmas or New Years, and I thought it about time I learned how to make it. 

First, you'll want to make your noodles. I made them the night before and let them sit in the fridge, covered, over night. I had the cutest little helper too!  



Homemade Noodles

Ingredients: 

3 egg yokes

1 egg
3 tablespoons cold water
1 teaspoon salt
2 cups flour


Directions: 


1. Separate yokes. Beat egg yokes and egg until very light. Beat in water and salt. Stir and work flour in with your hands to make a stiff dough. 

2. Divide dough into three parts. Roll each part out as thinly as possible....or not! You decide how thick or thin you want your noodles.
3. Cut dough into noodle strips. I found it fun and easy to use a pizza cutter! No need to be perfect. Imperfect noodles are more fun. 
4. Place noodles onto cookie sheet and let dry before cooking. You can place in fridge, covered, overnight for use the next day, or freeze in an airtight container if being used later. 


Have your noodles all ready? Soup time! 



Homemade Chicken Noodle Soup
 
Ingredients:

Whole chicken (either cooked yourself or rotisserie), skinned and torn into bite size pieces

Homemade noodles (see recipe above)
6 tablespoons chicken base 
1/2-1/3 cup butter
Celery bunch
1 large yellow or sweet onion
Bunch carrots, cleaned, peeled, and sliced. 
Garlic powder - to taste
Parsley flakes - to taste
Peppercorns - to taste
Sea salt - to taste
Rosemary - a pinch
Boxed chicken broth *as needed for extra liquid

Directions:


1. Add butter to a large stock/soup pot and turn on medium.

2. Cut celery and onion, add to pot. Cover and cook till soft; stirring occasionally. 
3. Add the spices to taste, a pinch of rosemary
4. Make stock - heat 8 cups water and add 6T chicken base. Stir until dissolved. 
5. Once celery and onion are cooked, add the 8 cups chicken stock. Turn stove up and bring to a boil. Add carrots and cook 30 minutes to soften. 
7. Add chicken and noodles. Return to boil, then turn stove to low and simmer till noodles are soft and done, stirring occasionally. 
8. If you feel you need more liquid, add some boxed chicken broth


I'm thinking that chicken noodle soup sounds like an amazing fall time meal! Time to pick up a chicken!
