Strawberry cobbler

We have a friend from our local farmers market that also lives not too far from us that has been picking strawberries from his garden and giving us some. How nice!! The kids think this is the coolest thing as the strawberries are little and "kid sized." 

I wanted to do something with the berries, but knew we didn't have enough to jam, so I found a really delicious cobbler recipe that turned out awesome! 

Ingredients:

3 cups fresh strawberries, diced
1/2-3/4 cup sugar
1 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1 cup milk
1/2 teaspoon vanilla extract
1 stick butter melted

Directions:

Preheat oven to 375*
In a medium bowl, add strawberries and 3/4 cup sugar.
Stir to coat strawberries in sugar and set aside. 
In a large bowl, whisk together flour, baking powder, salt, and sugar.
Add in milk, vanilla extract, and melted butter. 
Stir until combined, a few lumps are ok. 
Grease a 9in casserole dish (I used an 8x8).
Pour batter evenly into dish. 
Spoon strawberries evenly on top, DO NOT STIR.
Bake for 35-40 minutes or until golden brown on top (I baked mine for about 50 minutes). 


I plan to make a raspberry and a blackberry cobbler with some of the berries we picked! Mmm!
