Cheesy Chicken and Rice Casserole

Some friends who moved to a new place asked us over for a housewarming dinner yesterday. I was super stoked, but a little nervous because they asked us to bring a dish. I walked into the kitchen and looked around and thought to myself, "What the heck are we going to bring!?" As if a yummy dish of some sorts was going to magically appear before my eyes simply because I was willing it to. *sigh* Normally I would have left the matter up to Sammy, but because I have vowed to make more of an effort to cook (or try to cook), I told Sam I would handle it. You're proud of me already, aren't you? You haven't even seen what I came up with!

Cheesy Chicken and Rice Casserole.

1 can (5 oz.) chunk chicken (I used about 6-7 oz chicken breast cooked stove top in vegetable oil and garlic salt)
1 can chicken and rice soup
Salt and pepper to taste (I just used pepper)
1 can cream of chicken soup (I used cream of celery soup)
1 1/2 c. grated cheddar cheese
2 c. cooked rice
1/2 c. Ritz cracker crumbs

     1. Mix chicken, soups and rice in greased casserole dish.
     2. Bake at 350 degrees for 15 minutes.
     3. Take out and top with cheese and cracker crumbs.
     4. Place back in oven for 10 minutes.

After consulting with Sammy how to make rice and telling him quote, "I hope I don't fuck it up" lol I made the dish without any mishaps. And you know what, it was actually fun. Shocking!

The housewarming dinner went well and everyone seemed to like my dish. I didn't see anyone gagging on it anyway. :) Sammy told me it's definitely one he'd like me to make again. I told him sure thing, since I now know how to cook rice. YAY! I thought it was delicious.

  1. That looks super tasty! My family would love it, I can't eait because of the creamy goodness and cheese, but will definatly try for the fam. I have one simular that I will email you. It's rice with hambuger and ketchup I know it sounds kind of gross, but it's super good! Thanks for the muffin recipe too, I'll have to swap out the milk for soy milk, but most of the time I do this for muffins and breads, even cakes and no one ever notices!

    Can't wait to see posts of your time with Jill. I had a terrible time at our party. It was a flop, out of 75 people invited, only about 20 showed up. My nine year old niece got sick and was throwing up everywhere, I got super drunk and made a complete ass of myself and got my husband super pissed at me, and mananged to offend our dear friends (we'er their childrens God-parents) it was a nightmare. Cathy and Sherry came with the kids and I don't even remember half of my conversations with Sherry, I hadn't seen her since you guys were here back in 08. One I will never live down. You just can't take back the stupid. On the plus side I did make several new salads the day before and I'll send you some of those easy ones too.

    I've been getting lots of people telling me they are saving their clothes for me!! Yippe! so hopefully this time next year I can open up even a little eariler so parents can do back to school shopping! I have viewed your pictures and am really excited to put a flyer together.

    I hope you guys do make it our way next year! That would be awesome. You can bring a tent and we could camp out a couple of nights (with mattresses)LOL :p

  2. Mmm, that looks like the bestest non-fucked-up cheesy chicken and rice casserole like, everrr.

    And oh emm gee, if there's one thing I'm learning during my self-imposed psychology studies it's not to put a chapter about the mommy brain in my hands. You've come to mind through almost every paragraph Rebecca and I've come up with a bazillion questions, some of which you will probably never be asked again in your lifetime. Muwahaha!

    I'll try to narrow it down to just a few questions though 'cuz you can't really do a bazillion anything with rugrats around. (Did I really just call Anthony and Molly rugrats? How insensitive of me!)

    Looking forward to your post about your visit with Jill, as of course you knew I would be.

    Oh, and I emceed my brother's wedding on Saturday. I discovered the best way to embarass your brother is to insult his sexual prowess in front of his in-laws and 80 guests. Good times fer shure!

  3. I thought it was delicious! Though I think anything topped with cheese and buttered cracker crumbs is delicious! ;) Sammy thought it was great too. He said he's proud of me. YAY! LOL

    I'm always up for answering questions whenever I get the time. It's fun to talk about my life as a mom, what I think about being a mom, etc. etc. Plus, who doesn't like talking about themselves? :)
